Mini Omelet Recipe

Mini Omelets:

This one comes to me from a former client living out in Oklahoma (shout out to Katie Lasater! We miss you)

I saw her post a picture of the most delicious omelets I have laid eyes upon in a while and they were even aesthetically pleasing to boot.

These omelets require a cupcake/muffin pan so if you have one, please let me know how they turn out for you guys.

Without further ado:

Mini Omelets Recipe
Spray Pam on muffin pan
Cook bacon (I love bacon it’s the best. It makes life worth living) until it starts to brown, place in muffin pan.
Add veggies (I used bell peppers and spinach) to pan
Pour in eggs (12 eggs with salt and pepper)

Bake for 20-30 min at 350 until it’s no longer liquid.

Take it out of the oven and Voila! Mini omelets!
