Paleo Blueberry Muffins

I love breakfast. Even more, I love experimenting and creating yummy (and healthy) things to eat. Blueberry muffins are quite possibly the things I miss the most; until now. I found this awesome recipe that you guys need to try next time you are having a cheat day (as these are not low carb) Check them out and let me know how they taste.

 

Ingredients:

1/3 cup almond flour

2 tbsp coconut flour

2 tbsp arrowroot powder

1/3 tsp sea salt

1/4 tsp baking powder

3 eggs

3 1/2 tbsp honey

2 1/2 tbsp applesauce

2 tbsp coconut oil

1 tbsp vanilla extract

3/4 cup blueberries

Coconut oil to coat the muffin pan

Directions:

Pre-heat the oven to 350* F. In a bowl, combine the almond four, coconut flour, arrowroot powder, and baking powder. Mix thoroughly.

In a blender, combine eggs, honey, applesauce, sea slat, coconut oil, and vanilla.

Add the wet to the dry breaking up clumps and then fold in the blueberries.

Grease the muffin pan and fill each port about halfway up, no more than 3/4 of the way full.

Bake for 20-25 minutes or until a toothpick comes out clean.
