So its winter time, I woke up the other this morning and there was frost all over my windows and my back door was frozen shut from the rain the previous night.

As I took my arduous 5 minute drive to work, I thought back to Sunday morning and my girlfriends desire for pancakes that morning.

Being awesome, I set out to find a simple (read: easy enough my girlfriend could make them) paleo pancake recipe.

Please keep in mind, this is not low carb. The average banana has 27 carbs, even the almond butter servings here total roughly 7 carbs, and we are not counting the sugar in your syrup. (I used sugar free syrup, it tastes fine) The coconut flour helps with some fiber, but big picture, this is a cheat/splurge meal.

Next time you are going to have one, this is a decent choice and easy enough to make.

4 eggs

2 bananas (ripe)

1/4 cup coconut flour

2 Tbs almond butter

1 Tsp vanilla

1 Tsp baking powder

1/2 Tsp sea salt

1/2 Tsp cinnamon

*bonus ingredient: get some vanilla grass-fed protein powder from us and add a scoop or two into your recipe for a protein boost.


Put every ingredient into a blender and mix them up that way.


Use coconut oil to coat your pan and keep the heat on the medium-medium low side to avoid burning it all off.


Flip your pancakes once when bubbles form around the edges and they should have a nice golden brown color.


Slather on the Kerrygold or some other grass-fed organic butter (stay away from that margarine crap) and top with sugar free syrup.


Eat the crap out of those pancakes with a smile on your face.
